2. Add employees

If so, you could create two separate schedules with different start times and end times (and lunch breaks).

You'll also want to keep track of which days of the week your employees work on so that they get paid correctly by their employers--this is important because some employers pay employees based on how many hours they worked during each pay period rather than working 40 hours per week at one rate.
